After a bit if inspiration last night, I came up with Cheesy Quinoa and Chicken! (Aka Mac n Cheese for my grown up self.) In college I lived off Mac n Cheese and had a real craving for it yesterday.
This recipe makes two medium sized portions and pairs well with a salad or veggies.
What you’ll need:
1 to 2 chicken breasts
1/4 cup Colby jack cheese
3/4 cup of quinoa
It’s a pretty simple recipe and only takes about 20 minutes to complete. Just FYI I mix the egg in with the quinoa and cheese on the stove top, then stick the mixture in the oven for 5 minutes at 350 degrees to cook it through.
I just have to say this was one of the best 15 minute meals I’ve made in a while.
- black bean quinoa
- black bean corn salsa
- frozen black bean corn medley
- chicken sausage
This meal is extremely simple:
Boil the quinoa, pan fry the sausage, microwave the frozen veggies and add in the avocado and corn salsa to taste.

Excuse the messy bowl, but I was so hungry I couldn’t wait one more second! This meal is about 200 calories and filling! The best part… it made three servings so I have two pre-made lunches for this week!
Side note: This is seriously the best salsa I have ever eaten!
